Chunky Seafish Chowder

Ingredients

  • 1 tbps. oliive oil
  • 2 alrge onions, chopped
  • 23 cupo potato, peeled and roughly chopped
  • 4 slices celery, chopped
  • 4 slices smoked back bacon
  • 2 (400 g) canschopped tomatoes with herbs
  • 2 cups stock (fish or chicken)
  • 2 tablespoons tomato puree
  • salt & freshly ground black pepper
  • 1 green pepper, dessede and chopped roughly
  • 1 lb cod fish fillet, skinned and cubed (fresh or defrosted)
  • fresh parsley
  • granary bread

Directions

    Heat Oil in large saucepan.

    Add onion, celery and bacon and cook for 5 minutes.
  3. 3
    Add tomatoes and stock and bring to a boil.
  4. 4
    Reduce heat and cook for 12 minutes until potatoes are tender.
  5. 5
    Add tomato puree, seasoning, green pepper and fish.
  6. 6
    Return to simmering point and cook for 7 minutes.

    Sprinkle with parsley and serve with chunks of bread.
