- shrimp, mussels, clams or lobster (reserve liquid)
- 1/2 Tbsp. onion, finely chopped
- 2 Tbsp. butter
- 1 1/2 c. soft bread crumbs
- 1 c. milk
- 4 Tbsp. soft cheese
- 1 Tbsp. butter
- 2 egg yolks
- salt, pepper and cayenne
- water
- paprika
Directions

1Boil various shellfish for 30 minutes and reserve the water in which they were cooked.

2Fry onion in 2 tablespoons of butter and paprika.

3Add bread crumbs, milk and a little of the liquid from the shellfish.

4Simmer until the consistency of sauce.

5Add soft cheese, 1 tablespoon butter, egg yolks, salt, pepper and cayenne. Place the shellfish in the bottom of a clay casserole.

6Pour the sauce over the top and bake, covered, in a moderate oven for 40 minutes.

7Place uncovered under the broiler for the last 10 minutes.

8If desired, top with hard-boiled eggs and mashed potatoes.
