- 2 1/4 lb. ripe tomatoes, cored and diced
- 2 c. diced tart apples
- 2 c. diced onions
- 8 oz. pitted dates, cut up
- 4 large garlic cloves, fine cut
- 1 lemon, sliced thin
- juice of 1 lemon
- 3/4 c. tomato juice
- 3/4 c. apple juice
- 3/4 c. cider vinegar
- 1/2 c. honey
- 2 tsp. coriander
- 1 tsp. each: salt and pepper
- pinch of red pepper
Directions

1Place all ingredients into 6-quart pot and mix well.

2Bring to boil; reduce heat and simmer 30 to 45 minutes.

3Cool slightly and place in hot glass jars.
