Ingredients

  • 2 1/4 lb. ripe tomatoes, cored and diced
  • 2 c. diced tart apples
  • 2 c. diced onions
  • 8 oz. pitted dates, cut up
  • 4 large garlic cloves, fine cut
  • 1 lemon, sliced thin
  • juice of 1 lemon
  • 3/4 c. tomato juice
  • 3/4 c. apple juice
  • 3/4 c. cider vinegar
  • 1/2 c. honey
  • 2 tsp. coriander
  • 1 tsp. each: salt and pepper
  • pinch of red pepper

    Place all ingredients into 6-quart pot and mix well.

    Bring to boil; reduce heat and simmer 30 to 45 minutes.

    Cool slightly and place in hot glass jars.

    Makes 4 pints.
