- 2 tablespoons Butter
- 1 Large Onion, chopped
- 1/2 Red Bell Pepper, chopped
- 1/2 pound Chicken Breast, cut into cubes
- 1 teaspoon Ground Cumin
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1/4 cup Fresh Cilantro, minced
Directions

1Add 1 tablespoon of the butter to a large skillet over medium heat.

2Add the onion and bell pepper and cook until the onion is transparent and the pepper is soft, about 10 minutes.

3Place the onions in a dish and set aside.

4Add the other tablespoon of butter to the same skillet over medium heat.

5Place the chicken, cumin, salt and pepper in the skillet and cook until no longer pink.

6Add the onions and pepper back to the skillet.

7Add the lemon juice and cilantro to the skillet.

8Simmer until the lemon juice is reduced and all the flavors have combined.
