  • 1 cup quinoa, rinsed
  • 2 cups chicken broth
  • 1 garlic clove, minced
  • fresh ginger (1 inch, chopped)
  • 1 cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon toasted sesame oil
  • salt and pepper

    In medium saucepan, cook quinoa in broth. Fluff with a fork and transfer to a bowl.

    Meanwhile, in a blender, combine garlic, ginger, cilantro, lime juice and oil. Pulse until smooth.

    Add to quinoa, tossing with a fork to combine. Season to taste with salt and pepper.
