Cinnamon Buns

  • 400 g flour
  • 150 g sugar
  • 125 g butter, softened
  • 1 None medium egg
  • 200 ml milk
  • 21 g fresh yeast
  • 100 g hazelnuts, finely chopped
  • 1 tsp ground cinnamon
  • 100 g marzipan, grated

    To make the dough, gently heat the milk to lukewarm and dissolve the yeast. Set aside. Sift the flour into a bowl then add 1/3 cup sugar, 1/3 cup butter, the egg and a pinch of salt. Add the yeast and milk mixture. Knead until smooth. Cover and set aside to proof for 30-40 mins in a warm place.

    Meanwhile, melt the remaining butter then stir in the nuts. In a separate bowl, mix the remaining sugar with the cinnamon. Set both aside.

    On a floured work surface, knead the dough again then roll out into a 16 x 20 inch rectangle. Spread the nut mixture over top, reserving 2-3 tbsp for decoration. Next, add the grated marzipan and cinnamon sugar and press the toppings in lightly. Fold the dough in 1/2 and cut into 12 - 1 1/2 inch strips. Form each strip into a spiral then thread the loose end into the middle of the bun. Place the buns on a baking tray lined with parchment paper.

    Preheat the oven to 400°F. Brush the buns with the rest of the butter and nuts, cover and let proof for 10 mins in a warm place. Bake for about 14 mins. Remove from the oven, allow to cool on a wire rack then serve.
