Cinnamon Orange Chicken

- 4 chicken quarters
- 2 Tbsp. flour
- salt and pepper to taste
- 1 tsp. ground cinnamon
- 4 Tbsp. margarine
- 1/2 c. chicken broth
- 2 oranges
Directions

1Coat chicken in flour seasoned with salt, pepper and cinnamon. Heat margarine in large frying pan.

2Add chicken and saute for 20 minutes or until tender and golden all over.

3Remove chicken and drain on paper towels.

4Keep warm.

5Pour off fat from pan.

6Add chicken broth and finely grated rind and juice of 1 orange.

7Bring to a boil, whisking constantly.

8Arrange chicken on serving platter.

9Pour sauce on top.

10Peel remaining orange removing skin and pith; slice thinly.

11Arrange orange slices on chicken and serve with rice.
