Clam Chowder

  • 2 c. cooked clams, drained
  • 1 medium onion, chopped fine
  • 3 slices crisp fried bacon, crumbled
  • 2 to 4 medium potatoes, thinly sliced
  • 2 c. boiling salted water
  • salt and pepper
  • 3 c. milk or half and half

Directions

    Fry bacon, then saute onions in 2 tablespoons bacon fat. Simmer potatoes in water until tender.

    Add bacon, onion, salt and pepper to cooked potatoes.

    Simmer 5 to 10 minutes.

    Add milk and bring to boil.

    Add clams and barely heat.

    Serve with a dollop of butter and a pinch of thyme.

    Top with parsley.
