- 5 medium potatoes, unpeeled
- 2 tablespoons olive oil
- 12 cup sour cream
Directions

1Preheat oven to hot.

2Scrub potatoes well; brush with half of the oil.

3Place potatoes on oven tray; bake, uncovered, in hot oven about 50 minutes or until tender.

4Cool.

5Cut each potato into six wedges; carefully remove flesh, leaving skins intact.

6Place potato skins, skin-side down, on wire rack over oven tray; brush with remaining oil.

7Roast, uncovered, in hot oven about 20 minutes or until crisp; serve with sour cream.
