Classic Squash Casserole

Ingredients

  • 1 1/2 lb. fresh squach, sliced
  • 1/2 c. chopped green pepper
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/2 c. mayonnaise
  • 1/4 tsp. pepper (I use a little more)
  • 1 c. grated cheese
  • 1/2 c. chopped onion
  • 3 c. cooked rice
  • 1 can cream of chicken soup
  • 1 tsp. salt

    Cook squash about 5 minutes.

    Drain.

    Combine squash, onion, green pepper and rice.

    Blend eggs, soup, milk and mayonnaise. Stir into squash mixture.

    Stir in part of cheese but reserve some and sprinkle on top.

    Bake at 350° for 30 minutes.
