Classic Squash Casserole

Ingredients
- 1 1/2 lb. fresh squach, sliced
- 1/2 c. chopped green pepper
- 2 eggs, beaten
- 1/2 c. milk
- 1/2 c. mayonnaise
- 1/4 tsp. pepper (I use a little more)
- 1 c. grated cheese
- 1/2 c. chopped onion
- 3 c. cooked rice
- 1 can cream of chicken soup
- 1 tsp. salt
Directions

1Cook squash about 5 minutes.

2Drain.

3Combine squash, onion, green pepper and rice.

4Blend eggs, soup, milk and mayonnaise. Stir into squash mixture.

5Stir in part of cheese but reserve some and sprinkle on top.

6Bake at 350° for 30 minutes.
