- 1 pkg. light yellow cake mix
- 1 (4 serving size) pkg. instant coconut cream pudding mix
- 1/2 c. water
- 1/4 c. cooking oil
- 4 eggs
- 1 (6 oz.) can frozen pineapple juice concentrate
- 1 small can crushed pineapple, drained
- 1/2 c. frozen coconut, thawed
- 1 1/2 c. sifted powdered sugar
- 1 Tbsp. rum flavoring
Directions

1Grease and flour 10-inch tube pan.

2Set aside.

3In a large mixer bowl, combine cake mix, pudding mix, water, oil, eggs and 1/3 cup pineapple juice.

4Beat with electric mixer on low speed until combined.

5Beat on medium for 2 minutes.

6Add pineapple and coconut; stir by hand until blended.

7Pour into pan.

8Bake at 350° for 45 to 50 minutes, or until cake tests done.

9Cool; remove from pan.
