- 2 c. flour
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. baking powder
- 4 (2 1/2 oz.) jars baby food prunes
- 2 tsp. vanilla
- 2 eggs, beaten
- 1 c. nonfat milk
- 2 Tbsp. instant Espresso coffee (add this to batter mix)
- 1 c. boiling water
Directions

1Sift dry ingredients.

2Add prunes, vanilla, eggs and milk until blended.

3Add to mixture and bake at 350° for 30 to 35 minutes.
