- 3 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Kosher salt and freshly ground black pepper
- 1/4 cup olive oil
- 8 cups lettuce leaves, such as romaine or Bibb
- 1 small cooked chicken breast, diced
- 1 avocado, diced
- 1 tomato, diced
- 1 green pepper, stemmed, seeded and diced
- 4 slices bacon, cooked and crumbled
- 1/2 small red onion, diced
- 2 hard-boiled eggs, diced
- 2 ounces blue cheese, crumbled

1Whisk together the vinegar, mustard, garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.

2Slowly drizzle the olive oil in a steady stream, whisking vigorously, until the mixture is blended.

3Add the lettuce and toss to coat in the dressing.

4Pile the lettuce on a large serving platter.

5Arrange the chicken, avocado, tomato, green pepper, bacon, red onion, egg and blue cheese in neat rows over the lettuce.
