  • 1 clove garlic, minced
  • Kosher salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 8 cups lettuce leaves, such as romaine or Bibb
  • 1 small cooked chicken breast, diced
  • 1 avocado, diced
  • 1 tomato, diced
  • 1 green pepper, stemmed, seeded and diced
  • 4 slices bacon, cooked and crumbled
  • 1/2 small red onion, diced
  • 2 hard-boiled eggs, diced
  • 2 ounces blue cheese, crumbled

    Whisk together the vinegar, mustard, garlic, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.

    Slowly drizzle the olive oil in a steady stream, whisking vigorously, until the mixture is blended.
