  • 7 lb. sliced cucumbers
  • 2 gal. water
  • 2 c. hydrated lime
  • 4 1/2 lb. sugar
  • 1 1/2 qt. vinegar
  • 1 tsp. mustard seed
  • 1 tsp. celery seed
  • 3 tsp. salt

Directions

    Soak sliced cucumbers in water and lime for 24 hours.

    Rinse in cold water and drain.

    Let stand in cold water 3 hours and drain off.
  4. 4
    Pour syrup of sugar, vinegar, mustard and celery seed and salt over cucumbers and let stand overnight.

    Put on stove and cook for 30 minutes and then seal while hot.

    These are always crisp and you can use any size cucumbers.

    Weigh cucumbers after sliced.
