Ingredients

  • 8 oz dried linguine
  • 3 tbl. olive oil
  • 1/2 lb. stemmed and quartered fresh mushrooms
  • 1/2 cup julienned Sundried tomatoes packed in olive oil
  • 2 tbl. julienned fresh basil
  • 3 to 4 minced cloves garlic
  • 1 cup julienned spinach
  • 4 to 6 oz. crumbled feta cheese

Directions

    Cook linguine drain, rinse with cold water, drain again, set aside

    Heat olive oil in large saute pan
  3. 3
    Add mushrooms, sundried tomatoes and basil, saute over medium heat two or three minutes.

    Add garlic and saute another minute
  5. 5
    Add spinach, feta cheese and linguine to saute mixture tossing briefly.

    Salt to taste.

    Divide pasta between two plates and garnish with reserved feta
