Ingredients
- 8 oz dried linguine
- 3 tbl. olive oil
- 1/2 lb. stemmed and quartered fresh mushrooms
- 1/2 cup julienned Sundried tomatoes packed in olive oil
- 2 tbl. julienned fresh basil
- 3 to 4 minced cloves garlic
- 1 cup julienned spinach
- 4 to 6 oz. crumbled feta cheese
Directions

1Cook linguine drain, rinse with cold water, drain again, set aside

2Heat olive oil in large saute pan

3Add mushrooms, sundried tomatoes and basil, saute over medium heat two or three minutes.

4Add garlic and saute another minute

5Add spinach, feta cheese and linguine to saute mixture tossing briefly.

6Salt to taste.

7Divide pasta between two plates and garnish with reserved feta
