- 3/4 cup coconut flakes
- 5 1/4 tablespoons buttermilk or plain yogurt
- 1 cup cake flour
- 6 3/8 tablespoons sugar
- 1 tablespoon honey
- 3 1/2 tablespoons butter softened
- 2 eggs
- salt
- 2/3 tablespoon baking powder
- chocolate drops
Directions

1Preheat the oven to 180 degrees Celsius.

2In a food processor, add the coconut, buttermilk, flour, sugar, honey, butter, eggs, and a pinch of salt. Mix for 40 seconds.

3Add the the baking powder and mix for 10 seconds.

4Add the chocolate drops and mix for 10 seconds.

5Grease and flour a loaf pan. Pour in the mixture and bake for about 40 minutes.

6Remove from the tin and leave to cool on a cooling rack.
