  • 3/4 cup coconut flakes
  • 5 1/4 tablespoons buttermilk or plain yogurt
  • 1 cup cake flour
  • 6 3/8 tablespoons sugar
  • 1 tablespoon honey
  • 3 1/2 tablespoons butter softened
  • 2 eggs
  • salt
  • 2/3 tablespoon baking powder
  • chocolate drops

Directions

    Preheat the oven to 180 degrees Celsius.

    In a food processor, add the coconut, buttermilk, flour, sugar, honey, butter, eggs, and a pinch of salt. Mix for 40 seconds.

    Add the the baking powder and mix for 10 seconds.

    Add the chocolate drops and mix for 10 seconds.

    Grease and flour a loaf pan. Pour in the mixture and bake for about 40 minutes.

    Remove from the tin and leave to cool on a cooling rack.
