  • 500 g castor sugar
  • 375 g butter
  • 375 g chocolate
  • 1 tsp vanilla extract
  • 5 eggs
  • 125 g dried sour cherries
  • 1/4 cup Malibu (coconut rum)
  • 1 pkt chocolate chips
  • pinch salt
  • 200 g plain flour

    preheat oven to 180 degrees celcius

    line a brownie tray with baking paper or foil

    soak cherries and Malibu in a bowl
  4. 4
    melt butter and chocolate in a pan on the stove
  5. 5
    beat sugar, eggs and vanilla together
  6. 6
    stir in melted butter and chocolate
  7. 7
    stir in flour and then beat together until well combined
  8. 8
    stir in cherries, liquor and choc chips
  9. 9
    pour into pan

    bake for 30 minutes or until top is pale and cracking; mixture should not wobble when tray is shaken.
