- 2 c. sugar
- 1 stick margarine
- 1 tsp. vanilla extract
- 1 c. buttermilk
- 2 c. coconut
- 1/2 c. shortening
- 5 eggs, separated (large)
- 1 tsp. baking soda
- 2 c. flour
- 1 c. chopped nuts
Directions

1Cream sugar, shortening and margarine.

2Add egg yolks and vanilla; beat well.

3Dissolve baking soda into buttermilk.

4Sift flour; mix with coconut and nuts.

5Add milk mixture alternately with flour mixture to sugar mixture, beating well after each addition.

6Beat egg whites until stiff; fold into cake mixture. Bake in 3 well-greased and floured 9-inch cake pans for 30 minutes at 350°.
