- 1/3 cup butter softened
- 3/4 cup sugar
- 2 eggs
- 1 can (14 ounces) swwetened condensed milk
- 1/2 cup flour
- 2 cup desiccated coconut
- 1/2 tsp vanilla extract
Directions

1In a bowl, cream butter using a hand mixer on low speed.

2Add sugar and beat together until well blended and fluffy.

3Add eggs one at a time, beating continuousl.

4Add condensed milk and vanilla extract and continue to beat until blended.

5In a medium bowl, combine flour and dessicated coconut.

6Add to egg mixture and beat until combined.

7Scoop into paper lined mini muffin pans and bake in a 350F oven for about 15 to 20 minutes or until golden.

8Allow to cool for about 5 minutes.
