  • 3 c. flour, sifted
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 1/2 c. butter or solid shortening (Crisco)
  • 2 1/2 c. sugar
  • 5 eggs
  • 1 c. coconut
  • 1 Tbsp. coconut extract or vanilla

    Sift flour, salt and baking powder together twice.

    Cream butter and sugar for 10 minutes.

    Add eggs one at a time, beating well after each addition.

    Add dry ingredients alternately with milk, beating smooth after each addition.

    Stir in flavoring. Pour into 10-inch greased and floured tube pan.

    Place in cold oven; turn on at 325° and bake 1 hour and 25 minutes.
