  • 2 tablespoons vegetable oil
  • 1 cup long grain white rice
  • 1 cup coconut milk
  • 1 cup chicken stock
  • Salt and pepper

Directions

    In a saucepan, heat oil over medium high heat.

    Stir in rice and cook for 1 minute.

    Pour in coconut milk and chicken stock and bring to a boil.

    Cover and reduce heat to low and simmer for 15 minutes.

    Remove pan from heat and allow to rest for 5 minutes.
