- 2 tablespoons vegetable oil
- 1 cup long grain white rice
- 1 cup coconut milk
- 1 cup chicken stock
- Salt and pepper
Directions

1In a saucepan, heat oil over medium high heat.

2Stir in rice and cook for 1 minute.

3Pour in coconut milk and chicken stock and bring to a boil.

4Cover and reduce heat to low and simmer for 15 minutes.

5Remove pan from heat and allow to rest for 5 minutes.
