- 300 ml self raising flour
- 75 ml castor sugar
- 1/2 egg
- 90 grams butter
- 200 ml desicated coconut
- 12 ml milk
Directions

1Preheat oven to 180C.

2Sift flour and rub butter into flour till it resembles bread crumbs.

3Add sugar and coconut and mix well.

4Make a well in the middle, add beaten egg, adding a little milk if necessary to make a stiff dough.

5Roll out dough to 5mm thickness and using a biscuit cutter cut out large circles.

6Using a smaller biscuit cutter, cut circles within larger circles to form rings.

7Brush the rings with egg white and sprinkle with equal parts sugar and coconut.

8Bake in oven for 10-15 minutes.
