Ingredients

  • 300 ml self raising flour
  • 75 ml castor sugar
  • 1/2 egg
  • 90 grams butter
  • 200 ml desicated coconut
  • 12 ml milk

Directions

    Preheat oven to 180C.

    Sift flour and rub butter into flour till it resembles bread crumbs.

    Add sugar and coconut and mix well.

    Make a well in the middle, add beaten egg, adding a little milk if necessary to make a stiff dough.

    Roll out dough to 5mm thickness and using a biscuit cutter cut out large circles.

    Using a smaller biscuit cutter, cut circles within larger circles to form rings.

    Brush the rings with egg white and sprinkle with equal parts sugar and coconut.

    Bake in oven for 10-15 minutes.
