- 2 eggs
- 1 1/2 c. flour
- 1/2 c. dark rum
- 1/4 c. milk
- 1 Tbsp. baking powder
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 1/4 tsp. black pepper
- 2 c. shredded coconut
- 16 medium-sized shrimp, peeled and deveined
- vegetable oil for frying
Directions

1In medium-sized bowl, mix eggs, 1 cup flour, rum, milk, baking powder and spices.

2Place remaining flour in small bowl.

3Spread coconut on small plate.

4Dredge shrimp in flour, then dunk it in the batter, then dredge it in coconut.

5Place coated shrimp on waxed paper.

6Carefully drop shrimp in hot oil and fry 3 to 5 minutes.

7Drain on paper towels and serve hot.
