  • Sponge cake:
  • 2 eggs
  • 1/4 cup granulated sugar
  • 1/3 cup cake flour
  • 1 tbsp cornstarch
  • 2 tbsp cocoa
  • 1 tbsp butter
  • 1 tbsp milk
  • Coffee mousse:
  • 1 egg yolk
  • 1 egg white
  • 1/3 cup granulated sugar
  • 1/3 cup milk
  • 1/2 tbsp instant coffee
  • 2 tsp coffee liqueur (kahlua)
  • 1/3 cup heavy cream
  • 1 tsp gelatin
  • 2 tbsp water

Remove from heat and stir in the gelatin until dissolved.","20":"Place the bowl with egg yolks in an ice bath (I filled the sink) and little by little add the milk while stirring.
