Cold Rice Salad

Ingredients
- 1 pkg. Uncle Ben's chicken flavor rice
- 1 to 2 green onions and tops, chopped
- 1/2 green pepper, chopped
- 12 large stuffed olives, sliced
- 2 (6 oz.) jars marinated artichoke hearts
- 1/2 tsp. curry powder
- 1/2 c. mayonnaise
- 1 lb. shrimp, boiled and peeled (optional)
Directions

1Cook rice according to directions and cool.

2Add onions, pepper and olives to rice.

3Drain artichokes and save juice. Combine juice and curry powder with mayonnaise.

4Pour over rice, sliced artichokes and shrimp.

5Chill.

6Better done day before.
