Ingredients

  • 20 to 24 pieces chicken (breast, thigh and leg best)
  • 1/3 c. vegetable oil
  • 1/3 c margarine, melted (do not use low-fat kind)
  • 1 c. flour
  • 1 tsp. salt
  • 2 tsp. paprika
  • 1 tsp. white pepper
  • 1 tsp. dried marjoram
  • 1 tsp. garlic salt (optional)

Directions

    Rinse and dry each piece of chicken.

    Mix oil and margarine. Place oil and margarine mixture in a large, high-sided cookie sheet or jelly roll pan.

    In a large plastic storage bag, mix flour, salt, paprika, white pepper and dried marjoram.

    One at a time, dip chicken pieces in the oil mixture, then shake it in the flour mixture and place on a paper towel.

    Repeat this process until all chicken is coated.

    Place chicken pieces skin side up on cookie sheet containing any remaining oil mix.

    Bake at 375° for 45 minutes.

    Turn the chicken over and bake an additional 15 minutes.
