Ingredients

  • 4 duck breasts, boned and cut in chunks
  • 3 chicken breasts, boned and cut in chunks
  • water
  • 1 c. all-purpose flour
  • 1/2 c. vegetable oil
  • 1 lb. kielbasa sausage, cut in chunks
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 Tbsp. minced garlic
  • 1 lb. frozen okra slices, thawed
  • 8 oz. can tomato sauce
  • 6 oz. can tomato paste
  • 1 Tbsp. hot pepper sauce
  • 1 1/2 tsp. gumbo file
  • 4 c. chicken broth
  • 2 lb. uncooked Cajun seasoned or white rice

    Cook duck and chicken in water to cover in large stockpot, just until meat is cooked; do not overcook.

    Drain well.

    Add flour to hot oil in stockpot over medium heat.

    Cook, stirring constantly, to form caramel-colored roux; do not burn.

    Add duck, chicken, sausage, vegetables, tomato sauce and paste and seasonings to roux.

    Cook, stirring frequently, for 8 to 9 minutes or until vegetables begin to soften.

    Reduce heat and add broth. Prepare rice according to package directions.

    Serve 1 cup gumbo over 1 cup cooked rice.
