Ingredients
- 4 duck breasts, boned and cut in chunks
- 3 chicken breasts, boned and cut in chunks
- water
- 1 c. all-purpose flour
- 1/2 c. vegetable oil
- 1 lb. kielbasa sausage, cut in chunks
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 Tbsp. minced garlic
- 1 lb. frozen okra slices, thawed
- 8 oz. can tomato sauce
- 6 oz. can tomato paste
- 1 Tbsp. hot pepper sauce
- 1 1/2 tsp. gumbo file
- 4 c. chicken broth
- 2 lb. uncooked Cajun seasoned or white rice
Directions

1Cook duck and chicken in water to cover in large stockpot, just until meat is cooked; do not overcook.

2Drain well.

3Add flour to hot oil in stockpot over medium heat.

4Cook, stirring constantly, to form caramel-colored roux; do not burn.

5Add duck, chicken, sausage, vegetables, tomato sauce and paste and seasonings to roux.

6Cook, stirring frequently, for 8 to 9 minutes or until vegetables begin to soften.

7Reduce heat and add broth. Prepare rice according to package directions.

8Serve 1 cup gumbo over 1 cup cooked rice.
