Cookie's Lemon and lime cupcakes

- 2 eggs
- 2 lemons
- 2 limes
- 100 grams unsalted butter
- 100 grams sugar
- 1 tsp baking powder
- 1 tsp water
- 150 grams all purpose flour
- 100 grams butter
- 80 grams icing sugar
- 1 packages lemon and orange jelly sweets
Directions

1Firstly put paper cases into cupcake molds.

2Cream the butter and sugar together in a large bowl.

3Then add in the flour, eggs, baking powder and water.

4Mix well.

5Grate the zest from 1 lemon and 1 lime.

6Then juice half of the lemon and half the lime.

7Save the other halfs for the icing.

8Cream once more and spoon into cupcake molds.

9Cook for 20 mins at 180C.

10ICING:

11Cream the icing sugar and butter add the sugar gradually as you mix.

12Add the leftover juice from earlier.

13Grate the leftover lemon and lime and add.

14Mix carefully.

15Finally top your cooled cakes with icing and jelly sweets.
