Corn and Avocado Salsa

Ingredients

  • 4 cups Fresh Corn Kernels
  • 1 Tablespoon Fajita Seasoning
  • 1/2 teaspoons Black Pepper
  • 3/4 teaspoons Salt
  • 2 Tablespoons Vegetable Oil
  • 1 whole Red Bellpepper, Chopped
  • 1/2 whole Jalapeno, Seeded And Chopped
  • 1/2 cups Green Onion, Chopped
  • 1/4 cups Fresh Chopped Cilantro
  • 1/4 cups Fresh Lime Juice
  • 2 Tablespoons Orange Juice
  • 2 whole Ripe Avocados, Diced

Directions

    Saute corn, fajita seasoning, salt and pepper in vegetable oil for 6-8 minutes or until corn is golden.

    Let cool.

    Add all other ingredients to mixture except avocado.

    Chill mixture for 30 minutes.

    Stir in avocado just before serving.

    Great with tortilla chips and/or corn chips.
