Ingredients

  • 9 ears fresh corn or 3 cans whole kernel
  • 1 can Ro-Tel tomatoes
  • 1 lb. peeled shrimp
  • 1/2 c. green onions
  • 1/2 tsp. thyme
  • 1/2 tsp. basil
  • 1 Tbsp. parsley
  • 1 onion, chopped
  • 1/2 c. butter
  • 1/2 Tbsp. flour
  • 1/2 large can tomato sauce or 1 small can
  • 1 c. water
  • salt and pepper to taste

Directions

    Heat butter and add flour.

    Make a medium brown roux.

    Add onion and saute until done. Add remaining ingredients except green onions and parsley.

    Let simmer 1 hour. Add water for desired consistency. Add green onions and parsley. Simmer 15 minutes, then serve.
