  • 13 cup corn, peanut or vegetable oil
  • 1 cup cornmeal
  • 1/2 cup flour
  • Salt to taste, if desired
  • 1 tablespoon baking powder
  • 1 1/2 cup evaporated milk
  • 1 egg

Directions

    Preheat the oven to 350 degrees.

    Pour the oil into a 5-to-6-cup skillet and place in the oven.

    Let stand 5 minutes until the oil is hot.

    Sift together the cornmeal, flour, salt and baking powder into a mixing bowl.

    Add the evaporated milk and egg and the hot oil from the skillet.

    Stir to blend thoroughly.
