- 13 cup corn, peanut or vegetable oil
- 1 cup cornmeal
- 1/2 cup flour
- Salt to taste, if desired
- 1 tablespoon baking powder
- 1 1/2 cup evaporated milk
- 1 egg
Directions

1Preheat the oven to 350 degrees.

2Pour the oil into a 5-to-6-cup skillet and place in the oven.

3Let stand 5 minutes until the oil is hot.

4Sift together the cornmeal, flour, salt and baking powder into a mixing bowl.

5Add the evaporated milk and egg and the hot oil from the skillet.

6Stir to blend thoroughly.

7Pour the batter into the skillet and place in the oven.

8Bake 30 minutes.
