- 1/2 c. yellow corn meal
- 1/2 c. self-rising flour
- 1 Tbsp. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 egg
- enough milk to make a little thinner than pancake batter
- 2 Tbsp. olive oil
Directions

1Preheat oven to 450°.

2Heat oil in skillet.

3Mix corn meal, flour, sugar, baking powder, salt, egg and milk.

4Pour oil into corn meal batter and stir.

5Pour back into skillet.

6Bake about 20 minutes or until golden brown.
