- 2 chicken breasts, small dice
- 4 slices of good bacon, small dice
- 8 ounces mushrooms, chopped
- 1 Jiffy cornbread mix
- 4 ounces of fire roasted chilies
- 1 cup frozen corn kernels
- honey
Directions

1Preheat Oven to 350.

2Grease a 9x13 baking pan.

3Cook chicken, bacon and mushrooms together.

4Place chicken, bacon and mushrooms in the bottom of casserole pan.

5Mix Jiffy Mix according to directions.

6Add chilis and corn to the jiffy mix.

7Pour on top the chicken mixture.

8Bake 45 - 60 minutes or until corn bread is completely baked.

9Serve with a drizzle of honey on top.
