  • 1 can (15 Oz. Can) Creamed Corn
  • 1 can (15 Oz. Can) Corn With Juice
  • 1 cup Sour Cream
  • 1/2 cups Chopped Onion
  • 1/3 cups Oil
  • 1/4 cups Chopped Green Pepper
  • 2 whole Eggs, Beaten
  • 2 boxes (about 8.5 Oz. Box) Jiffy Corn Muffin Mix, Divided
  • 1 cup Shredded Cheddar Cheese, Divided

Directions

    Preheat oven to 375°F.

    Beat all ingredients together, reserving 1/2 box corn muffin mix and 1/4 cup cheese.

    Pour into a buttered 11 x 7 casserole dish. Sprinkle remaining muffin mix and cheese on top.

    Bake for about 35 minutes, until lightly browned and a toothpick inserted comes out clean.
