- 1 can (15 Oz. Can) Creamed Corn
- 1 can (15 Oz. Can) Corn With Juice
- 1 cup Sour Cream
- 1/2 cups Chopped Onion
- 1/3 cups Oil
- 1/4 cups Chopped Green Pepper
- 2 whole Eggs, Beaten
- 2 boxes (about 8.5 Oz. Box) Jiffy Corn Muffin Mix, Divided
- 1 cup Shredded Cheddar Cheese, Divided
Directions

1Preheat oven to 375°F.

2Beat all ingredients together, reserving 1/2 box corn muffin mix and 1/4 cup cheese.

3Pour into a buttered 11 x 7 casserole dish. Sprinkle remaining muffin mix and cheese on top.

4Bake for about 35 minutes, until lightly browned and a toothpick inserted comes out clean.
