  • 5 c. fresh or frozen corn
  • 1/4 c. butter or margarine
  • 2 egg whites
  • 1 1/2 c. cornmeal (yellow)
  • 1 tsp. salt
  • 1 c. chopped steamed onions
  • 1 c. cottage cheese
  • 1 c. diced Cheddar cheese
  • 1/3 c. diced green pepper

Directions

    Saute onions and pepper in a little water until soft.

    Combine all ingredients and pour into a buttered 2-quart casserole dish. Bake in a 350° oven for 1 hour or until brown.
