Ingredients
- 2 large onions, chopped
- 2 Tbsp. margarine
- 1 can creamed corn (No. 303)
- 1 can Mexicorn
- 1 c. milk
- 2 eggs
- 3/4 c. cornmeal or 1/2 pkg. cornbread mix
- 1 (8 oz.) sour cream
- 8 oz. grated Cheddar cheese
- 1 tsp. salt
- 1/2 tsp. pepper
Directions

1Saute onions in margarine until tender and lightly brown.

2Cool completely.

3Beat eggs well.

4Add milk, cans of corn, cornmeal, salt and pepper.

5Mix well.

6Add onions and cheese (reserve some cheese to sprinkle over the top of the casserole).

7Pour mixture into 3-quart casserole.

8Bake in a 350° oven for 50 to 60 minutes, until lightly browned.
