- 2 (16 oz.) cans creamed corn
- 1 small onion, chopped
- 1/2 c. cooking oil
- 1 tsp. garlic powder
- 1 small jar pimentos, chopped
- 1 c. grated Cheddar cheese
- 1 (6.5 oz.) pkg. Mexican corn bread mix
- 4 eggs, beaten
Directions

1In a large mixing bowl, beat eggs until fluffy; add all ingredients together, except cheese.

2Mix well.

3Pour into oblong 9 x 13-inch greased baking dish.

4Bake for 30 minutes at 350°; top with grated cheese and bake 15 minutes longer.
