  • 2 (16 oz.) cans creamed corn
  • 1 small onion, chopped
  • 1/2 c. cooking oil
  • 1 tsp. garlic powder
  • 1 small jar pimentos, chopped
  • 1 c. grated Cheddar cheese
  • 1 (6.5 oz.) pkg. Mexican corn bread mix
  • 4 eggs, beaten

Directions

    In a large mixing bowl, beat eggs until fluffy; add all ingredients together, except cheese.

    Mix well.

    Pour into oblong 9 x 13-inch greased baking dish.

    Bake for 30 minutes at 350°; top with grated cheese and bake 15 minutes longer.
