- 2 tsp olive oil
- 3 slices bacon cut into 1 inch pieces
- 1/2 lb gold or red potatoes peeled and diced
- 1 red pepper cut into 1/2 inch squares
- 3 cups frozen corn or raw corn from 5 ears
- 1 small red onion sliced thin
- 2 Tbsp cider vinegar or rice vinegar
- crushed red pepper flakes
Directions

1Cook bacon in oil until crisp.

2Drain on paper.

3Reserve 2 Tbsp bacon fat in pan.

4Cook potatoes until brown about 5 mins.

5Add peppers and cook 5 mins. more.

6Add corn and cook 3 mins. more.

7Toss in onions, vinegar, salt to taste, red pepper flakes and bacon.
