Corn Chowder Salad

Ingredients

  • 2 tsp olive oil
  • 3 slices bacon cut into 1 inch pieces
  • 1/2 lb gold or red potatoes peeled and diced
  • 1 red pepper cut into 1/2 inch squares
  • 3 cups frozen corn or raw corn from 5 ears
  • 1 small red onion sliced thin
  • 2 Tbsp cider vinegar or rice vinegar
  • crushed red pepper flakes

Directions

    Cook bacon in oil until crisp.

    Drain on paper.

    Reserve 2 Tbsp bacon fat in pan.

    Cook potatoes until brown about 5 mins.

    Add peppers and cook 5 mins. more.

    Add corn and cook 3 mins. more.

    Toss in onions, vinegar, salt to taste, red pepper flakes and bacon.
