- 1 (16 oz.) can whole kernel corn
- milk
- 1 1/2 c. flour
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1 egg, beaten
Directions

1Drain off 1 can of corn.

2Add milk to the drained liquid to measure 1 cup.

3Combine flour, baking powder and salt.

4Combine beaten egg, milk mixture and corn.

5Add to dry ingredients.

6Mix just until flour is moistened.

7Drop batter by tablespoon into deep, hot fat (375°).

8Fry until golden brown, about 3 minutes. Drain on paper towels.

9Serve with warm maple syrup.

10Makes about 18 fritters (feeds 3 to 4).
