- 1 c. all-purpose flour
- 4 tsp. baking powder
- 2 Tbsp. granulated sugar (double for sweeter muffins)
- 1 tsp. salt
- 1 c. yellow corn meal
- 2 large eggs
- 1 c. milk
- 1/4 c. vegetable oil
Directions

1Grease twelve 2 1/2-inch muffin cups.

2Heat oven to 425°. Sift flour, baking powder, sugar and salt into a medium size mixing bowl.

3Add corn meal; stir to mix well.

4In a small bowl, beat eggs with a fork.

5Add milk and oil.

6Add all at once to dry ingredients; stir until moistened.

7Batter will be lumpy.

8Drop batter from a tablespoon into the prepared muffin cups, filling each cup half to two-thirds full.

9Bake for 15 to 20 minutes, or until golden brown.

10Remove from pan and serve hot with butter.
