- 2 Tbsp. shortening
- 2 1/2 c. white cornmeal
- 1 scant tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 2 c. sour milk
- 1 egg, well beaten
- 2 Tbsp. melted butter
Directions

1Grease muffin pan generously with shortening.

2Set in a 400° oven.

3Sift cornmeal, salt, soda and baking powder into mixing bowl.

4Add sour milk and stir well.

5Add the beaten egg and melted butter.

6Heat muffin pan very hot.

7Fill each cup and bake in 400° oven for 20 to 25 minutes.

8Serve hot.
