Ingredients

  • 1/3 c. wine vinegar
  • 1/3 c. sugar
  • 1/3 c. Mazola oil
  • 1 small can leisure peas
  • 1 can Shoepeg corn (white)
  • 1 can Mexican corn
  • black olives, cut in small pieces
  • green onions, cut in small pieces
  • celery, cut in small pieces
  • pimientos (optional)
  • 1 can mushrooms (optional)

Directions

    In microwave, heat vinegar, sugar and oil until sugar dissolves.

    Drain and mix peas, Shoepeg corn, Mexican corn, olives, onions, celery, pimientos and mushrooms.

    Mix in vinegar dressing and store in refrigerator until well chilled.

    Will keep for up to 2 weeks.

    Goes well with everything.
