Corn-Rice Bake

  • 1 c. precooked packaged rice
  • 2 c. cream-style corn
  • 2 eggs, beaten
  • 2 chopped pimentos
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 Tbsp. butter or margarine
  • 1 c. grated Cheddar cheese
  • 1 Tbsp. butter

Directions

    Prepare rice with 1 cup water (no salt) as directed on package label.

    Add cream-style corn, eggs, pimentos, onion, salt, pepper and 2 tablespoons melted butter or margarine.

    Put 1/2 of mixture in 9-inch pie pan (or bake dish).

    Sprinkle with 1/2 cup grated cheese.

    Add remaining mixture and top with 1/2 cup more cheese. Dot with 1 tablespoon butter or margarine.

    Bake in moderate oven at 350° for 30 minutes or until golden brown and bubbly.

    Makes 4 to 6 servings.
