  • Cast Iron corn stick muffin pan, seasoned
  • 1 cup of self rising corn meal
  • 2 tsp. self rising flour
  • touch of oil
  • 1 egg
  • dash of salt
  • milk

Directions

    Mix all ingredients together.

    Place a couple of drops of oil in muffin pan.

    Place empty muffin pan in 375-400 degree oven. When muffin pan is hot, spoon mix into pan (should sizzle).

    Bake until golden brown. Great with soup, fresh peas, crumpled up in milk or hot with butter.
