  • 4 c. cornmeal
  • 3 c. flour
  • 5 Tbsp. sugar
  • 1 tsp. salt
  • 4 eggs
  • 3 c. milk (skim, 1%, 2% or whole)
  • 1 c. vegetable shortening, heated but not fully melted

    Combine dry ingredients in large bowl.

    Add eggs, one at a time, mixing after each addition.

    Blend in milk.

    Add shortening and mix well.

    Cover and refrigerate 1 hour.

    Preheat oven to 500°. Grease small corn stick molds (5 x 1 1/2-inches) and set in oven until molds are hot.
