Ingredients

  • 1/2 c. yellow cornmeal
  • 1/2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 Tbsp. sugar
  • 1 large egg, beaten
  • 1/2 c. canned evaporated milk
  • 2 Tbsp. vegetable oil
  • dehydrated minced onions (optional)

Directions

    Combine first 5 ingredients in medium bowl.

    Add egg, milk and oil.

    Stir until smooth.

    Stir in onions (optional).

    Coat pan with Pam.

    Heat stick pan in oven at 425° until hot.

    Remove pan from oven and spoon in batter 2/3 full.

    Return pan to oven and bake at 425° for 10 to 12 minutes until lightly brown.
