  • 1/4 c. sugar
  • 1/2 c. yellow corn meal
  • 1/2 c. white corn meal
  • 1 c. all-purpose flour minus 3 Tbsp.
  • 3 Tbsp. bran
  • 1 Tbsp. wheat germ
  • 4 tsp. baking powder
  • 2 eggs
  • 3/4 tsp. salt
  • 1/4 c. oil
  • 1 1/2 c. buttermilk with 1/4 tsp. soda dissolved in it

Directions

    Heat 9-inch iron skillet on top of stove with a tad of the oil to grease.

    When hot, pour in batter and put in hot oven.

    Bake for 20 minutes at 425°.
