  • 1 pkg. Italian sausage
  • 2 (2.5 oz.) cans chopped olives
  • 2 (4 oz.) cans mushrooms
  • 1 (15 oz.) Ricotta cheese (optional)
  • 1 lb. Mozzarella cheese, grated
  • 4 oz. Cheddar cheese, grated
  • 1 jar Prego with mushrooms
  • 1 large box manicotti shells

    Brown Italian sausage; drain.

    In a large bowl, combine first 6 ingredients.

    Boil manicotti shells for 8 minutes; drain.

    Spray 9 x 13-inch glass dish with Pam.

    Cover bottom with Prego (1/2 jar).

    Stuff shells with mixture and place in dish.

    Cover the stuffed shells with the remaining Prego.

    Bake at 350° for 30 minutes.

    Put remaining mixture over the top and bake for another 10 minutes.

    Let stand 5 minutes; serve.
