  • 1/2 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 3/8 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 2 tablespoons canola oil

Directions

    1. Preheat oven to 425 degrees. Grease 6 muffin tins.

    2. Stir together flour, cornmeal, sugar, baking powder and salt.

    3. Add eggs, milk and oil. Mix together just until smooth-do NOT over mix.

    4. Pour into 6 muffin tins. Bake for 15 minutes.
