Cornbread Salad

Ingredients

  • 1 box cornbread mix
  • 1 can pinto beans, drained and rinsed
  • 2 crisp bacon slices, crumbled
  • 1/2 c. celery, chopped
  • 1/4 c. green pepper, diced small
  • 1 c. tomatoes, chopped
  • 1/2 c. green onions, diced
  • 1/2 c. chopped dill pickles
  • 1 1/2 c. mayonnaise
  • 1/2 c. sweet pickle juice

Directions

    Bake cornbread mix and cool.

    Break into pieces in a 9 x 13-inch pan.

    Layer in pan, pinto beans, bacon, celery, pepper, tomatoes, onions and pickles.

    Mix mayonnaise with sweet pickle juice and pour over the top.

    Refrigerate overnight.
